Pork is central to our tables across Northern Iloilo and Capiz — whether nilagang baboy, sinugba, inasal, or lechon. But questions often mix up two very different concerns: parasites in meat and Foot‑and‑Mouth Disease (FMD). This article explains both clearly, separates fact from fear, confirms what is safe to eat, and cites official standards.
🦠 Part 1: Foot‑and‑Mouth Disease (FMD)
✅ Status Update: No confirmed FMD outbreaks in Iloilo or Capiz in 2026. Vaccination and border checks remain active.
- What it affects: Pigs, cattle, carabao, goats, sheep — cloven‑hoofed animals only.
- Signs: Blisters on mouth/feet, drooling, limping, lower production.
- Important: NOT the same as Hand, Foot, and Mouth Disease in children — totally unrelated viruses.
- Human risk: Extremely rare; only from close animal contact — never from eating cooked meat.
- Food safety: Virus is fully killed by boiling, grilling, or roasting.
- Real threat: Spreading FMD to other animals — huge losses for farmers.

Unlike FMD, these can affect humans if meat is not cooked properly:
- Pork Tapeworm (Taenia solium): From raw/undercooked pork; can cause serious illness including cysticercosis.
- Trichinella spiralis: Causes fever and muscle pain from half‑done pork.
- All parasites: Die completely at ≥63°C internal heat; safe if cooked through.
